Ingredients

  • - 1 whole chicken (about 3-4 lbs), cut into pieces
  • - 4 cups red wine (Burgundy or Pinot Noir)
  • - 2 cups chicken broth
  • - 1 onion, chopped
  • - 2 carrots, sliced
  • - 4 cloves garlic, minced
  • - 200g pearl onions, peeled
  • - 200g mushrooms, quartered

Instructions

  1. 1In a large bowl, marinate the chicken pieces in red wine, thyme, and bay leaves for at least 2 hours, preferably overnight.
  2. 2Remove the chicken from the marinade and pat dry with paper towels. Reserve the marinade.
