Coq au Vin is a classic French dish that combines chicken with red wine, mushrooms, and aromatic herbs, creating a deeply flavorful and comforting stew. This dish is perfect for a warm gathering and embodies the essence of rustic French cooking.
Ingredients
- - 1 whole chicken (about 3-4 lbs), cut into pieces
- - 4 cups red wine (Burgundy or Pinot Noir)
- - 2 cups chicken broth
- - 1 onion, chopped
- - 2 carrots, sliced
- - 4 cloves garlic, minced
- - 200g pearl onions, peeled
- - 200g mushrooms, quartered
Instructions
- 1In a large bowl, marinate the chicken pieces in red wine, thyme, and bay leaves for at least 2 hours, preferably overnight.
- 2Remove the chicken from the marinade and pat dry with paper towels. Reserve the marinade.
