Lemon Herb Quinoa Salad

Ingredients

  • - 1 cup quinoa, rinsed
  • - 2 cups vegetable broth or water
  • - 1 cup cherry tomatoes, halved
  • - 1 cucumber, diced
  • - 1 bell pepper, diced
  • - 1/4 red onion, finely chopped
  • - 1/4 cup fresh parsley, chopped
  • - 1/4 cup fresh mint, chopped

Instructions

  1. 1In a medium saucepan, combine quinoa and vegetable broth or water. Bring to a boil, then reduce heat to low and simmer for 15 minutes, or until quinoa is fluffy and liquid is absorbed.
  2. 2In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, parsley, mint, and feta cheese.
