Ingredients

  • - 1 pre-made puff pastry sheet
  • - 1 medium zucchini, thinly sliced
  • - 1 medium eggplant, thinly sliced
  • - 1 medium bell pepper, thinly sliced
  • - 1 medium red onion, thinly sliced
  • - 2 cups ricotta cheese
  • - 1/4 cup grated Parmesan cheese
  • - 2 cloves garlic, minced

Instructions

  2. 2Roll out the puff pastry on a floured surface and fit it into a tart pan. Trim any excess pastry around the edges.
